With approximately 25 grams of protein per 100 grams, using 150 grams of lentils for this dough provides around 37.5 grams of protein. This makes lentil dough pizza an excellent choice for anyone looking to increase their protein intake naturally.

Protein pizza recipe 

Lentil dough ingredients:

  • 150g red lentils
  • 150ml water
  • A pinch of salt

Preparation:

  1. Rinse the lentils thoroughly to remove any debris and than soak it in water for at least 2 hours. This helps soften them, making them easier to blend and digest.
  2. Discard the soaking water. Blend the soaked lentils with a pinch of salt and 150ml of fresh water until you achieve a smooth batter.
  3. Preheat your oven to 220°C. Line a baking sheet with parchment paper and pour the lentil mixture onto it, spreading it evenly. Bake for about 15 minutes. Remove the dough, flip it to ensure an even bake and bake for an additional 5-7 minutes if you prefer a crispier base.
  4. Once the dough is baked, add your favorite toppings. For this recipe, I use tomato sauce, cheese, zucchini, porcini mushrooms and cherry tomatoes, all sprinkled with oregano. Return the pizza to the oven and bake for another 5 minutes until the toppings are melted and slightly browned.
